ALL of our classes are full participation, so everyone learns how to perfectly create  the special dishes.  Plus techniques and time saving tips as well as the history of the dish and or ingredients are always featured.    We are accepting registrations for our on-line class, "All About Chiles" with over 40 lectures and 150 kitchen tested recipes.    Our ALL NEW Tamale Rolling video is  available for purchase.  And we also have a tamale making kit available.

Our next class is our   Southwestern Traditional New Mexican Holidays will be December 2 at 5 PM and Gifts from a Southwestern Kitchen December 16 at 2 PM.   Many more 2022 class are listed on our calendar.  We still have 3 openings for the Holidays class and 7 forthe Gifts class.

Our next weekend class is February 18 - 20. 2022 and our next week long class is March 7 - 11, 2022.

Let me just say thanks for your wonderful ground chile powders, which have served me well over many a year.

For your amusement, I've attached my own Texas-style recipe, customized so that even novice chili makers can make it without too much bother. I've sent it around to many friends over the years - and, as you'll see, I always credit you.
