salad.jpgWith the steamy hot “ dog days” of summer fast approaching, when everything seems to go “on wilt”--- I thought some refreshing, new, delightfully simple—yet amazingy healthful main dish salads might just fill the bill. These are all from my Jane Butel’s Quick and Easy Southwestern Cookbook, which is available for $15.00; hard-bound, normally $23.00.

These recipes can each be made in approximately 20 minutes with an average of 5 ingredients and are healthy and low calorie—quite a good way to eat. For vegetarian versions of the four recipes that do have meat or seafood, grilled tofu or your favorite cooked beans could be substituted.

On another note, my French Rocket Lavendar plant has really taken off, encouraging me to do more with lavender than put everlasting bouquets in our bedroom and each bathroom.  The clean scent of lavendar which is so refreshing, yet relaxing  has always attracted me to use lavender in other ways.

So, last weekend--I made Lavendar Apricot Jam which has a subtle flavor—somewhat perfume-like and was absolutely delicious on toast. Next weekend I am making Lavendar Plum Jam. And, for years I have been making Lavender Iced Tea and Lavender Sugar. Lavendar Margaritas and rubs for poultry are a few of the ideas I have not tried. I would love to hear your favorite lavender cooking ideas.
