Grilled chicken

With this summer getting off to such a torrid start—keeping cool in the kitchen is a great idea. What can be better, then main dish salads for a great, light meal. Grilling the meats or vegetables takes the heat out of the kitchen and cuts down on the dishwashing as well. However, If you prefer, you can always pan sear or broil the meats or vegetables.

The recipes I am sharing are each quick and easy to prepare and offer a spicy edge—creating a flavorful and fun meal. Warm crunchy crusted Italian or French bread are great accompaniments—or you may prefer corn tortillas or chips.
