Maple Teased Apple and Cranberry Dessert

There’s something yummy about apple and maple combinations—whether in pancakes or desserts. Here the tart tinge of cranberries really balances the flavors and is especially great with vanilla ice cream or frozen yoghurt.

Yield: 4 servings

Temperature: 375 F

Baking time: 30 to 35 minutes

4 ½ cups tart apples (about 5 medium or 4 large apples) peeled

1/2 cup fresh cranberries (if dried, use only a scant half cup)

¼ cup maple syrup

1/4 cup sugar

Topping:

½ cup sugar

1 Tablespoon molasses

½ cup oatmeal

½ cup whole wheat flour

1 teaspoon ground cinnamon

Several grates nutmeg or ½ teaspoon

6 Tablespoons unsalted butter (3/4 stick)

1. Preheat oven to 375 F. Then butter a 3 quart casserole and place the fruit in the bottom. And top with the syrup and sugar.

2. Combine the sugar, molasses, oatmeal, flour and spices in a medium sized bowl. Cut in the butter with a knife and mix together with fingers or pastry blender until well mixed. Scatter the topping over the filling and bake until an inserted knife comes out clean—about 45 minutes.
