Frito Pie
These are quite popular to prepare for fund raisers, at sporting events and quick food places. Santa Fe tourists always used to love buying them from a takeout window at Woolworth’s on the Plaza, which sadly is long gone. They are the best, when prepared in the small snack sized bags.
Temperature: 350 F Baking Time: 15 minutes Yield: 4 servings
4 small snack sized bags Fritos 2 cups chili, any kind, ½ cup chopped onion ¾ cup grated cheddar or Monterey Jack and Cheddar combination
1. Preheat the oven to 350F. Then cut a slit down the center of each of the four bags of Fritos and pull out one-half of the chips and set aside. Place the Frito bags on a baking sheet.
2. Top with a layer of chili, onion and cheese, then replace the balance of the chips. Divide the remaining chili, onion and cheese among the four bags. Place in the oven until the cheese melts—about 15 minutes.
