Fruity Nachos
Want a departure from the everyday? These unusual nachos are a refreshing break from the traditional hearty flavors of beans, cheese, and jalapeno. You can use almost any firm fruit, alone or in combination-I like nectarines, grapes, apples, and strawberries.
Yield: serves 4
4 corn tortillas (6 inches each), cut into quarters 4 Tablespoons cream cheese (about half of an 8-ounces package) At least ½ cup thinly sliced nectarines, apples, strawberries, or grapes, alone or combined Juice of ½ lime ¼ teaspoon pequin quebrado
1. Preheat the oven to 425 F.
2. Place the tortillas in a single layer on a baking sheet, then place a smaller baking sheet on top of them (this keeps them flat as they bake). Place the tortillas in the oven and bake for 5 minutes. Then remove the smaller baking sheet and continue to bake the tortillas until they are crisp, 5 to 8 minutes more.
3. Spread the cream cheese evenly over the tortillas chips, and arrange the chips on a serving platter. Combine the fruit, lime juice, and pequin quebrado in a bowl, and toss to mix. Then arrange the fruit on top of the cream cheese in an artistic fashion (sometimes I make a facing using a strawberry for the mouth, grapes for the eyes, and apple slices for the eyebrows; other times I arrange the fruit in concentric circles or in crisscrossing line.
