STUFFED DATES WITH ALMONDS
There are many variations you can try for stuffing dates. I am partial to stuffing them with whole, roasted and salted almonds and for extra special events, I like to roast them with a bacon wrap.
Yield: serves 6
12 seedless dates
12 whole roasted and salted almonds
4 pieces of bacon
1. Insert the almonds into the dates and serve as is or cut each of the bacon slices into 3 pieces.
Parfry the bacon about 1 ½ minutes in the microwave or fry until half cooked in a skillet. Then wrap each stuffed dates with a piece of the bacon and secure with a toothpick.
2. Place under a low broiling temperature and broil until the bacon is crispy and drain.
