My Favorite Garlic Bread

Garlic bread prepared this way has so much more flavor than the garlic powder stirred into softened butter. I think it becomes boring after you have had garlic bread prepared this way.

1, foot long loaf of Crusty French or Italian bread, cut in thick slices

4 Tablespoons unsalted butter (1/2 stick)

4 Tablespoons olive oil

4 cloves garlic, sliced and coarsely chopped

2 or more Tablespoons coarsely grated Parmesan or Romano cheese, optional

1 Tablespoon Italian flat leaf parsley, chopped, optional

½ teaspoon pure mild red chile powder, optional

1. In a small saucepan, melt the butter and olive oil together. Add the garlic, then cook until the garlic becomes light brown—just a few moments. Drizzle on the bread, evenly distributing the toasted garlic pieces.

2. Place on grill or under a low heated broiler and heat until lightly toasted. Garnish with the cheese, parsley and a sprinkle of the red chile if desire. Serve warm.
