JANE BUTEL'S AWESOME ASPARAGUS
This amazingly delicious way to prepare asparagus is equally good with zucchini. It is so quick, you will be amazed how little fussing you must do to prepare it. Allow about 6 spears of asparagus per person.
Yield: 4 to 6 servings
Temperature: high broil
Cooking time: 5 minutes
1 pound fresh asparagus, preferably the small diameter variety
2 to 3 Tablespoons extra virgin olive oil
2 to 3 Tablespoons freshly grated Parmesan or to taste
Several grinds black pepper
- 1. Preheat the broiler to high. Wash asparagus and break where the tough end wants to break off and place on a foil lined jelly roll pan or cookie sheet with an edge.
- 2. Place asparagus on the cookie sheet and drizzle with the oil, then sprinkle with the cheese and black pepper (this can be done at least two hours before dinner.) When broiler is hot, place under the broiler and broil until the cheese begins to bubble and turn brown. Test an asparagus spear with a fork and if tender, remove from the broiler and serve on a warm platter.
Notes: 1 to 2 cloves of fresh minced garlic can be added along with the Parmesan to the tops of the asparagus spears.
Zucchini can be thinly sliced and prepared the same way. I call them Zucchini Planks.
