Italian Herbed Roasted Potatoes
These are delicious with most any meal or even as a snack. They are best when made with starchy, fresh, high-quality potatoes. The fresh herbs can be varied to suit what you have available.
Yield: 4 Servings Cooking time: 15-20 minutes
4 medium potatoes (any kind), unpeeled
1 Tablespoon extra-virgin olive oil, preferably Spanish
2 Tablespoons finely minced mixed fresh herbs or 2 teaspoons crushed dried herbs
½ teaspoon salt or to taste
Several grinds black pepper
1. Preheat the oven to 450 F. Slice the potatoes lengthwise, then cut into ¾-inch-wide wedges. Place on a baking sheet and drizzle with the oil. Combine the herbs, then sprinkle on the potatoes.
2. Bake for 15 to 20 minutes (stirring after about 7 minutes for even baking), until the potatoes are tender and somewhat browned on the tips.
Variation: Sweet potatoes can be substituted.
