This special menu is perfect for Christmas Eve, no matter your traditions. Or, for that manner, it is delicious any time of year. The Green Chile Chicken Casserole has a delightful Salsa Verde Creme sauce that really sets it apart and can easily be made up to 3 days ahead.

Perfect, chunky Guacamole is always fun, possessing the Christmas colors and seems to be a perfect appetizer for a New Mexican dinner.

Accompanying the Green Chile Chicken Casserole is a Red Pepper and Endive Salad which is pretty as a picture with the crispy texture of the endive to set a perfect foil for the sweet red pepper strips and all is complemented by a Salsa Vinaigrette.

And for a very special treat, you will learn the secrets to moist, yummy Bizcochitos and mouth watering Empanadas with a Spanish pastry. Jane will teach you the secrets for makin a beautirul repulgar edging for the Empanadas.
