Message From Jane
The merry month of May always brings the gaiety and fun of Cinco de Mayo—what a fun party that is to celebrate! Of course, May has so many other holidays too—May Day, the Kentucky Derby, Mother’s Day and many have graduation Day or the fond memories thereof.
Loving Mexican food as much as I do, it is always fun to dream up a delicious dinner for this very special celebration. To refresh your memory, it is often called the Battle of Pueblo, when the underarmed, undertrained and undermanned army of Mexico, which had been under French rule, preventing them from having their own army—defeated the French army of Napoleon’s. No wonder it is cause for a celebration!
Bizcochitos were created right then and there. They are the state cookie of New Mexico and so delicious—when made like a shortbread (rolled at least 3/8 inch thick) and fun, cut into the fleur de lis shape to reminisce this battle—where they French were stamped out. (The fleur de lis is the symbol on the French flag—looking like a stylized iris.) So these cookies should be a must at any “Cinco” party.
For a Cinco de Mayo party, it would be quite fun to serve Carne Adobado Quesadillas with salsa and cremas, Carnitas, Double Chile Deviled Eggs and a Taco Buffet with a Fruit Plate and Bizcochitos.
Remembering Gordon—those of you who attended my week long and weekend classes or ordered Pecos Valley spices over the past 18 years, probably remember Gordon’s assistance whenever you wished to make margaritas or order spices.
