Spring is such a spiritual season. And beautiful too. I have always loved the brilliantly hued flowers and the little tight fisted buds on the fruit trees promising a bountiful crop if not frozen.
No matter how you believe, the renewal of the season is beautiful. Signaling warmer and balmier days—longer days, promising the summer season ahead.
With spring, brunches seem just the ticket for enjoying eating alfresco or out of doors to enjoy the beauty of the season.
Southwestern Brunches are always fun. The spiciness of chiles, awakening our taste buds, create an added dimension to brunch.
One of my all-time favorites is Huevos Rancheros made with a delightfully flavorful sauce of green chiles and fresh tomatoes, another is Chile Pie—a quiche like dish with any filling within. Or a traditional favorite of the early morning crowds watching the Balloon Fiesta in Albuquerque is the Breakfast Burrito.
