Jane's Message                                           July, 2017 

4th of July dogFourth of July is so much fun in the little colonial village, Corrales, where I live. Each year, they have the Pet Parade, which is not limited to animal pets of all kinds and descriptions. There are collections of antique automobiles, Elvis Presley look-a-likes, marching bands, antique farm implements, businesses and groups promoting themselves and of course kids of all ages with all kinds of pets—including lots of beautiful horses all decked out for the Fourth.

I have always enjoyed watching the parade from the front courtyard of Nate and Hannah’s. one of the restaurants right along Corrales Road, where we enjoy a luscious breakfast of yummy local specialties such as Huevos Rancheros, great belly busting burritos and carne adobado eggs.

No matter where you were this Fourth-- watching fireworks and eating foods cooked outside on a grill were probably on your agenda. For enjoying  anytime, I am sharing some of my personal favorite  side dish recipes you will want to try.
