With the sizzling heat scorching most all of us—I thought a quartet of my favorite summer main dish salads would be a welcome treat! 

The Grilled Chicken and Chard Salad is double quick and out of my ”Quick and Easy Southwestern Cookbook” and is pictured here. The Chicken Rice Salad is also out of the same book—which means the recipes were developed to be created in less than 20 minutes with an average of 5 ingredients.  

The other two Grilled Salads are from my Southwestern Grill cookbook and feature grilled veggies for one and the other highlights grilled turkey. The Grilled Vegetable Salad is just plain yummy and could have grilled meat or fish added to it, if desired.

 The Grilled Turkey Salad has the flavors of the tropics with papaya or mango and avocado and is just perfect for a “too hot to cook night”.  

OUR NEW BLOG, “Chiles and Chilis…Southwestern Cooking with Jane Butel” is developing quite nicely.
