Fourth of July is so much fun in the little colonial village, Corrales, where I live. Each year, they have the Pet Parade, which is not limited to animal pets of all kinds and descriptions. There are collections of antique automobiles, Elvis Presley look-a-likes, marching bands, antique farm implements, businesses and groups promoting themselves and of course kids of all ages with all kinds of pets—including lots of beautiful horses all decked out for the Fourth.

I have always enjoyed watching the parade from the front courtyard of Nate and Hannah’s. one of the restaurants right along Corrales Road, where we enjoy a luscious breakfast of yummy local specialties such as Huevos Rancheros, great belly busting burritos and carne adobado eggs.

No matter where you will be this Fourth-- watching fireworks and eating foods cooked outside on a grill are probably on your agenda. For enjoying the Fourth or anytime, I am sharing some of my personal favorite portable appetizer and side dish ideas and recipes you will want to try.

They are selected from my newly republished Jane Butel library of cookbooks. The Chuckwagon Salad and the Barbecued Baked Beans are from my just out “Barbeque cookbook” and the Marinated Vegetable Salad with Blue Cheese Dressing is from my “Tex-Mex” cookbook and the Fresh Fruit Tart is from my latest cookbook, “Simply Southwest”.
