This class is the most popular weekend class and features the traditional flavors of New Mexico.

The history and lore of the evolution of the cuisine will be featured along with chile facts where

the tremendous health of chiles and their unique properties will be detailed. The mystical history

of corn and its historic importance is the highlight of the Saturday class. The amazing development

of sopaipillas, bizcochitos and carne adobado will be pointed out

Immerse yourself in the art of Southwest and Tex Mex Cooking at a week long vacation cooking school in New Mexico.

The class begins with a get-acquainted reception at 6 p.m. on Sunday, followed by dinner at a local restaurant featuring New Mexican specialties.


Continental New Mexican breakfasts at 8:30 AM start each day, Monday through Friday, followed by Jane’s review of the history of Southwest cuisine and major ingredients. A demonstration of the menu items for the day follows, along with hints and techniques for success. After the demonstration, it is your turn to shine! Students begin cooking in small groups, guided through the recipes by Jane and her assistants.
Finally, you will enjoy the fruits of your labor with a bountiful lunch complete with your choice of beverage, including selected wines and beers. Each session concludes about 2 p.m.

Weeklong Class Menus

PRICING
Our special full participation class features the Southwest's classic, as well as innovative dishes. We are rated by BON APPETIT magazine as one of four best vacation cooking schools in the world! Class fee includes five individual classes, breakfast and lunch each day, two dinners, a get-acquainted reception plus a cookbook, apron and a diploma to take home. A deposit is required to reserve a space in the class. If a cancellation must be made, a $150 administrative fee will be deducted and every attempt will be made to reschedule. If the cancellation is not made 60 days ahead of time, the fee will be applied to future schools and cannot be refunded. In the event that Jane Butel's Cooking School must alter or cancel the class because of events beyond its control, the fees will be refunded.

Jane Butel’s Cooking School announces a very special culinary tour hosted by Jane Butel. This wonderful tour features three hands-on cooking classes, tours of historic sites, market tours and artisan visits. The seven-day tour is outlined in the following itinerary.

The total tour cost (excluding airfare) is $2,300. A single room supplement is an additional $290. The price includes seven days and six night’s accommodations, area excursions including a market visit, three cooking lessons each with a meal, daily breakfasts, lunches and dinners as listed in the itinerary, all ground transportation (including to and from the airport), taxes, tips, and gratuities. Tips to guides not included.

A deposit of $600 per person is due upon reservation. If you choose to pay in full with your reservation, you will receive 10% off the tour cost.
Final payment is due April 5, 2009
